-Whilst brewing tea, intermittent tea leaves to move freely and in constant contact with the water to allow maximum favour extraction. Use a fine tea strainer to pour the tea. Whatever brewing method you use, the idea is to give the tea plenty of room to move.
-The quality of the water you are using can make a big difference to the taste of your tea. Tea flavour extracts better in soft water or spring water.
-While the tea is brewing cover the teapot with a tea cosy to keep the heat in.
-Do not leave the leaves in your tea for too long, the flavour comes out first and then the tannins start to come out second - leaving your tea strong and bitter.
-Spent tea leaves are an excellent source of fertiliser, believe it or not!
-Honey can be added to iced tea for sweetness, but without detracting from it’s natural healthy ingredients. You can also add peach juice to iced tea, or lemon juice, for a different flavour.
-Tea should not be kept in the refrigerator as it will absorb moisture and food smells. It will keep for more than 24 months if kept airtight in a dry place.
